Beef and Barley Soup



I enjoy me some beef and barley soup. I have not been able to find a recipe I really love, so I take from a few and do my thing. You can also use stew meat if you choose. Occasionally, I will also add potatoes.


1 lb Ground Beef
5 stalks celery
1 onion, chopped
1 cup pearl barley (quick cook kind)
3 cans beef broth
2 cups water
1 can petite diced tomatoes
1 can tomato paste
1 tablespoon parsley, dried
1 tablespoon basil, dried
1 tsp thyme, dried
1 tablespoon minced garlic
ground pepper
salt

Brown beef in large skillet. Drain excess fat
cook celery, onion and garlic until soft
In a large pot add beef, vegetables and remaining ingredients. Bring to a boil. Cover and simmer 40 minutes. Add salt and pepper to taste.
